Formulating and testing a new recipe for the Spring issue of Edible Rhody Magazine (out on March!). But it was too pretty not to share! What you see is my Sautéed beet greens with Roasted beet salad. Roasting the beets help them to retain their phytonutrients while cooking. Quick, simple and healthy! I use the beet greens and roots so there is NO food waste. Beets are one of those things that you either love or hate. I happen to ADORE beets. As someone who has been anemic for as long as I remember, beets have been the thing to get me through. Beets have long been considered a Superfood. Beet roots boost energy, detox the body, improve cognitive and physical functioning, fight inflammation and promotes healthy skin. Beets contain vitamins A, B6 and iron which means they're good for helping to clean your liver. The leafy green tops are also rich in antioxidants and vitamins like vitamin C, K and calcium. They can help to lower blood pressure and can also help to improve eye and heart health. Beet greens are also great for gut health among many other things.
